Lemon Souffle Omelette
Ingredients
- 6 eggs
- 4 tablespoons powdered sugar
- Grated lemon peel
- ¼ pound butter
- Powdered sugar for sprinkling
Method
- 1 Beat egg yolks and whites separately until very light, then gently mix them together.
- 2 Melt butter in a pan, pour in the egg mixture, and stir until the eggs have absorbed the butter.
- 3 Turn the mixture onto a buttered plate, sprinkle with powdered sugar, and set in a hot Dutch oven.
- 4 Cook until lightly browned, then serve immediately.
