Lemon Simple Syrup

Ingredients

  • 3 pounds loaf sugar
  • 3 quarts water
  • 1 quart lemon juice

Method

  1. 1 Dissolve the sugar in the water.
  2. 2 Squeeze and strain enough lemons to yield one quart of juice.
  3. 3 Boil the lemon juice with the sugar water slowly, skimming off the scum as it rises.
  4. 4 Once the mixture is clear, strain it and bottle it for storage.
