Lemon Savoy Sponge Cake

Ingredients

  • 1/2 lb loaf sugar
  • Zest of 2 lemons
  • 1/4 cup boiling water
  • Juice of 1-2 lemons
  • 4 egg yolks
  • 1/4 lb fine flour
  • 4 egg whites
  • Butter and sugar for greasing/mould

Method

  1. 1 Rub lemon zest on sugar lumps to infuse flavor, then dissolve sugar in boiling water.
  2. 2 Add lemon juice and egg yolks to the sugar mixture; beat until very white and thick.
  3. 3 Stir in flour, then gently fold in egg whites beaten to a strong froth.
  4. 4 Pour into a buttered and sugared mould, nearly filling it.
  5. 5 Bake at 350°F for 30 minutes.
