Lemon Roll Pancakes

Ingredients

  • 1 egg yolk
  • 2 tablespoons sugar or syrup
  • 1 cup milk
  • 1 tablespoon shortening
  • 1 teaspoon salt
  • 1 teaspoon vanilla or nutmeg
  • 1 ¼ cups flour
  • 2 teaspoons baking powder
  • 1 egg white, stiffly beaten
  • 2 tablespoons shortening (for cooking)
  • 3 tablespoons butter
  • ½ cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon boiling water

Method

  1. 1 In a bowl, beat the egg yolk, sugar, milk, shortening, salt, and vanilla/nutmeg until thoroughly mixed.
  2. 2 Fold in the stiffly beaten egg white.
  3. 3 Heat 2 tablespoons of shortening in a frying pan over medium-high heat until smoking hot.
  4. 4 Pour just enough batter into the pan to cover the bottom.
  5. 5 Cook until bubbles form on the surface, then flip and bake the other side.
  6. 6 Serve with jelly or roll up with a filling made by creaming butter and sugar, then mixing in lemon juice and boiling water.
