Lemon Roll Pancakes
Ingredients
- 1 egg yolk
- 2 tablespoons sugar or syrup
- 1 cup milk
- 1 tablespoon shortening
- 1 teaspoon salt
- 1 teaspoon vanilla or nutmeg
- 1 ¼ cups flour
- 2 teaspoons baking powder
- 1 egg white, stiffly beaten
- 2 tablespoons shortening (for cooking)
- 3 tablespoons butter
- ½ cup sugar
- 1 tablespoon lemon juice
- 1 tablespoon boiling water
Method
- 1 In a bowl, beat the egg yolk, sugar, milk, shortening, salt, and vanilla/nutmeg until thoroughly mixed.
- 2 Fold in the stiffly beaten egg white.
- 3 Heat 2 tablespoons of shortening in a frying pan over medium-high heat until smoking hot.
- 4 Pour just enough batter into the pan to cover the bottom.
- 5 Cook until bubbles form on the surface, then flip and bake the other side.
- 6 Serve with jelly or roll up with a filling made by creaming butter and sugar, then mixing in lemon juice and boiling water.
