Lemon Rock Cakes
Ingredients
- 1 lb flour
- 3 oz butter
- 5 oz granulated sugar
- Grated rind of 1 lemon
- Juice of 2 lemons
- 1 egg
- Milk as needed
- 1 tsp baking powder
Method
- 1 Rub the butter into the flour.
- 2 Add the sugar, baking powder, lemon rind, and juice.
- 3 Mix with the well-beaten egg and enough milk to form a very stiff mixture.
- 4 Place the mixture in small rough heaps on a greased baking sheet.
- 5 Bake in a 425°F oven for about 15 minutes.
