Lemon Rock Cakes

Ingredients

  • 1 lb flour
  • 3 oz butter
  • 5 oz granulated sugar
  • Grated rind of 1 lemon
  • Juice of 2 lemons
  • 1 egg
  • Milk as needed
  • 1 tsp baking powder

Method

  1. 1 Rub the butter into the flour.
  2. 2 Add the sugar, baking powder, lemon rind, and juice.
  3. 3 Mix with the well-beaten egg and enough milk to form a very stiff mixture.
  4. 4 Place the mixture in small rough heaps on a greased baking sheet.
  5. 5 Bake in a 425°F oven for about 15 minutes.
