Lemon Rice Soufflé

Ingredients

  • 2 tbsp ground rice
  • 1 cup milk or cream
  • 1 thin strip lemon rind
  • Sugar to taste
  • 1 bay leaf
  • 4 egg yolks
  • Sugar for egg yolks
  • 4 egg whites

Method

  1. 1 Combine ground rice, milk or cream, lemon rind, sugar, and bay leaf. Stew for 10 minutes.
  2. 2 Remove lemon rind and bay leaf. Let mixture cool completely.
  3. 3 Beat egg yolks with sugar, then stir into the cooled rice mixture.
  4. 4 Beat egg whites to stiff peaks and gently fold into the batter.
  5. 5 Pour into a greased mold and bake at 425°F for 20 minutes.
