Lemon Rice Soufflé
Ingredients
- 2 tbsp ground rice
- 1 cup milk or cream
- 1 thin strip lemon rind
- Sugar to taste
- 1 bay leaf
- 4 egg yolks
- Sugar for egg yolks
- 4 egg whites
Method
- 1 Combine ground rice, milk or cream, lemon rind, sugar, and bay leaf. Stew for 10 minutes.
- 2 Remove lemon rind and bay leaf. Let mixture cool completely.
- 3 Beat egg yolks with sugar, then stir into the cooled rice mixture.
- 4 Beat egg whites to stiff peaks and gently fold into the batter.
- 5 Pour into a greased mold and bake at 425°F for 20 minutes.
