Lemon Rice Pudding With Meringue Topping
Ingredients
- 1 cup rice, boiled soft
- 1 pint milk
- 1 egg-sized piece butter
- Salt to taste
- 4 egg yolks
- Lemon rind, grated
- 4 egg whites
- 1 cup sugar
- Juice of 1 lemon
Method
- 1 Mix boiled rice, milk, butter, salt, egg yolks, and lemon rind.
- 2 Bake the mixture for 30 minutes.
- 3 Beat egg whites and sugar, then add lemon juice.
- 4 Pour the topping over the cooled pudding and brown in the oven.
