Lemon Rice Pudding With Currants
Ingredients
- ¾ cup rice, washed
- ½ cup currants
- 1¼ cups milk
- 1 egg yolk
- 2½ tablespoons sugar
- 1 small piece lemon rind
Method
- 1 Boil rice in a large quantity of boiling water for 20 minutes, then drain.
- 2 Add milk, sugar, lemon rind, and currants to the drained rice.
- 3 Cook slowly for 15 minutes, then remove from heat.
- 4 Beat the egg yolk in a little milk and stir into the rice.
- 5 Do not return to heat. Serve cold.
