Lemon Rice Pudding With Currants

Ingredients

  • ¾ cup rice, washed
  • ½ cup currants
  • 1¼ cups milk
  • 1 egg yolk
  • 2½ tablespoons sugar
  • 1 small piece lemon rind

Method

  1. 1 Boil rice in a large quantity of boiling water for 20 minutes, then drain.
  2. 2 Add milk, sugar, lemon rind, and currants to the drained rice.
  3. 3 Cook slowly for 15 minutes, then remove from heat.
  4. 4 Beat the egg yolk in a little milk and stir into the rice.
  5. 5 Do not return to heat. Serve cold.
