Lemon Rice Pudding Pie
Ingredients
- 1 pint washed rice
- Milk or water
- 1 lump butter
- 5 eggs
- Sugar to taste
- Essence of lemon or lemon peel
- Cream
- Pie crust
Method
- 1 Boil washed rice in milk or water until soft.
- 2 Stir in butter, eggs, sugar, and lemon flavoring.
- 3 Mix in cream until the consistency is thin enough to pour.
- 4 Pour into a pie crust in deep plates.
- 5 Bake until set.
