Lemon Raisin Bread Pudding With Meringue
Ingredients
- 4 egg yolks
- 1 pint soft bread crumbs
- 1 cup sugar
- grated rind of 1 lemon
- 1 teaspoon salt
- 1 cup large table raisins, seeds removed
- 1 quart rich milk
- 4 egg whites
- ½ cup sugar
- granulated sugar for dredging
Method
- 1 Beat egg yolks. Mix in bread crumbs, 1 cup sugar, lemon rind, salt, and raisins.
- 2 Stir in 1 quart milk. Pour into a baking dish and bake in a 300°F oven until firm in the center.
- 3 Let pudding cool slightly. Beat egg whites until dry, then beat in ½ cup sugar.
- 4 Spread or pipe meringue over pudding. Dredge with granulated sugar.
- 5 Return to 300°F oven for 15 minutes, until meringue is lightly colored.
