Lemon Raisin Bread Pudding With Meringue

Ingredients

  • 4 egg yolks
  • 1 pint soft bread crumbs
  • 1 cup sugar
  • grated rind of 1 lemon
  • 1 teaspoon salt
  • 1 cup large table raisins, seeds removed
  • 1 quart rich milk
  • 4 egg whites
  • ½ cup sugar
  • granulated sugar for dredging

Method

  1. 1 Beat egg yolks. Mix in bread crumbs, 1 cup sugar, lemon rind, salt, and raisins.
  2. 2 Stir in 1 quart milk. Pour into a baking dish and bake in a 300°F oven until firm in the center.
  3. 3 Let pudding cool slightly. Beat egg whites until dry, then beat in ½ cup sugar.
  4. 4 Spread or pipe meringue over pudding. Dredge with granulated sugar.
  5. 5 Return to 300°F oven for 15 minutes, until meringue is lightly colored.
