Lemon Raisin And Citron Tarts

Ingredients

  • 1 cup sugar
  • 1 lemon
  • 1/4 lb chopped candied citron peel
  • 1 Crisco flake pastry
  • 1 egg
  • 1 cup raisins
  • 1 tablespoon melted Crisco
  • 1/4 teaspoon salt

Method

  1. 1 Roll pastry thin and cut out large circles.
  2. 2 Beat egg, then mix in sugar, melted Crisco, lemon rind and juice, salt, citron, and raisins.
  3. 3 Place a tablespoon of filling on each pastry circle. Wet the edges and fold over to seal, pressing gently without piercing.
  4. 4 Place tarts on greased baking sheets and bake in a hot oven (425°F) for 12 to 15 minutes.
