Lemon Puff Pastry Tart
Ingredients
- rind of 3 lemons
- juice of 2 lemons
- 3 sponge biscuits
- 6 ounces fresh butter
- 4 ounces sifted sugar
- ½ cup cream
- 3 eggs, well beaten
- puff pastry for pan lining
- candied lemon peel, thinly sliced
Method
- 1 Grate the rind of 3 lemons and mix with the juice of 2 lemons.
- 2 Crush 3 sponge biscuits and combine with the lemon mixture, 6 ounces fresh butter, 4 ounces sifted sugar, ½ cup cream, and 3 well-beaten eggs.
- 3 Work the mixture thoroughly until well combined.
- 4 Line a pan with puff pastry and fill with the mixture.
- 5 Top with thinly sliced candied lemon peel.
