Lemon Puff Pastry Tart

Ingredients

  • rind of 3 lemons
  • juice of 2 lemons
  • 3 sponge biscuits
  • 6 ounces fresh butter
  • 4 ounces sifted sugar
  • ½ cup cream
  • 3 eggs, well beaten
  • puff pastry for pan lining
  • candied lemon peel, thinly sliced

Method

  1. 1 Grate the rind of 3 lemons and mix with the juice of 2 lemons.
  2. 2 Crush 3 sponge biscuits and combine with the lemon mixture, 6 ounces fresh butter, 4 ounces sifted sugar, ½ cup cream, and 3 well-beaten eggs.
  3. 3 Work the mixture thoroughly until well combined.
  4. 4 Line a pan with puff pastry and fill with the mixture.
  5. 5 Top with thinly sliced candied lemon peel.
