Lemon Puff Pastry Custard Pie

Ingredients

  • 3 oz butter
  • 3 oz sugar
  • 2 eggs
  • 1 oz breadcrumbs
  • Juice of 1 lemon
  • Flavoring of choice
  • Puff pastry

Method

  1. 1 Beat butter and sugar until creamy.
  2. 2 Beat in eggs one at a time.
  3. 3 Pour boiling milk over breadcrumbs to soak, then add to mixture.
  4. 4 Stir in lemon juice and flavoring.
  5. 5 Line a pie dish with puff pastry and fill with mixture.
  6. 6 Bake at 350°F for 30 minutes.
  7. 7 Sift sugar on top and serve hot or cold.
