Lemon Puff Pastry Custard Pie
Ingredients
- 3 oz butter
- 3 oz sugar
- 2 eggs
- 1 oz breadcrumbs
- Juice of 1 lemon
- Flavoring of choice
- Puff pastry
Method
- 1 Beat butter and sugar until creamy.
- 2 Beat in eggs one at a time.
- 3 Pour boiling milk over breadcrumbs to soak, then add to mixture.
- 4 Stir in lemon juice and flavoring.
- 5 Line a pie dish with puff pastry and fill with mixture.
- 6 Bake at 350°F for 30 minutes.
- 7 Sift sugar on top and serve hot or cold.
