  • 2 cups white sugar
  • 3 egg yolks
  • juice of 2 lemons
  • grated rind of ½ lemon
  • 1 cup boiling water
  • 2 tablespoons cornstarch
  • 1 tablespoon butter

Method

  1. 1 Mix sugar, egg yolks, lemon juice, and lemon rind in a saucepan.
  2. 2 Place over heat and stir in boiling water.
  3. 3 Mix cornstarch with a little cold water, then add to the pan.
  4. 4 Stir in butter and boil until the mixture thickens like custard.
