Lemon Pie Filling
Ingredients
- 2 cups white sugar
- 3 egg yolks
- juice of 2 lemons
- grated rind of ½ lemon
- 1 cup boiling water
- 2 tablespoons cornstarch
- 1 tablespoon butter
Method
- 1 Mix sugar, egg yolks, lemon juice, and lemon rind in a saucepan.
- 2 Place over heat and stir in boiling water.
- 3 Mix cornstarch with a little cold water, then add to the pan.
- 4 Stir in butter and boil until the mixture thickens like custard.
