Lemon Pepper Salmon Patties
Ingredients
- 3/4 cup breadcrumbs
- 1/4 cup reduced-fat mayonnaise
- 1 egg, slightly beaten
- 1/2 teaspoon lemon pepper
- 7 ounces frozen salmon, thawed, drained, and finely chopped
- Cooking spray
Method
- 1 Wash hands. In a medium bowl, mix breadcrumbs, mayonnaise, egg, and lemon pepper.
- 2 Add the chopped salmon and mix until combined.
- 3 Measure 1/3 cup of the mixture and form into a round patty. Repeat to make five patties.
- 4 Spray a skillet with cooking spray and heat over medium heat.
- 5 Cook patties 5-7 minutes per side until light brown and internal temperature reaches 145°F.
