Lemon Pepper Salmon Patties

Ingredients

  • 3/4 cup breadcrumbs
  • 1/4 cup reduced-fat mayonnaise
  • 1 egg, slightly beaten
  • 1/2 teaspoon lemon pepper
  • 7 ounces frozen salmon, thawed, drained, and finely chopped
  • Cooking spray

Method

  1. 1 Wash hands. In a medium bowl, mix breadcrumbs, mayonnaise, egg, and lemon pepper.
  2. 2 Add the chopped salmon and mix until combined.
  3. 3 Measure 1/3 cup of the mixture and form into a round patty. Repeat to make five patties.
  4. 4 Spray a skillet with cooking spray and heat over medium heat.
  5. 5 Cook patties 5-7 minutes per side until light brown and internal temperature reaches 145°F.
