Lemon Pepper Egg White Sauce

Ingredients

  • 1 oz butter
  • 1/2 oz flour
  • 1/2 pint milk
  • lemon juice
  • pepper and salt
  • 1 or 2 hard-boiled eggs, chopped

Method

  1. 1 Melt butter in a small saucepan.
  2. 2 Mix in flour smoothly to form a roux.
  3. 3 Add milk, stirring constantly until cooked and thickened.
  4. 4 Stir in lemon juice, pepper, salt, and chopped egg whites.
