Lemon Parsley Fried Whitebait

Ingredients

  • whitebait
  • salt
  • flour
  • hot fat
  • 1 tablespoon butter
  • lemon juice
  • chopped parsley

Method

  1. 1 Clean, wash, and wipe the whitebait dry. Season with salt and roll in flour.
  2. 2 Fry the whitebait in hot fat until cooked through.
  3. 3 Melt butter, add a squeeze of lemon juice and chopped parsley. Pour over the fish and serve.
