Lemon Or Vanilla Meringue Cookies
Ingredients
- 3 egg whites
- 7½ tablespoons powdered sugar
- ½ teaspoon lemon extract or 1/3 teaspoon vanilla
Method
- 1 Beat egg whites until stiff peaks form.
- 2 Gradually add 4 tablespoons of powdered sugar while beating vigorously.
- 3 Fold in the remaining powdered sugar.
- 4 Mix in the lemon extract or vanilla.
