Lemon Or Chocolate Egg White Cookies
Ingredients
- 1/2 lb fine-sifted sugar
- Zest of 1 large lemon
- 1 egg white
- 1 oz chocolate (for chocolate variation)
Method
- 1 Grate the lemon zest into the sugar. For chocolate drops, grate the chocolate instead and omit the zest.
- 2 Whip the egg white to a froth and mix it into the sugar until the mixture is stiff like working paste.
- 3 Sift a little sugar onto baking paper. Drop spoonfuls of the mixture onto the paper.
- 4 Bake in a very slow oven (300°F) until set.
