Lemon Or Chocolate Egg White Cookies

Ingredients

• 1/2 lb fine-sifted sugar
• Zest of 1 large lemon
• 1 egg white
• 1 oz chocolate (for chocolate variation)

Method

1. 1 Grate the lemon zest into the sugar. For chocolate drops, grate the chocolate instead and omit the zest.
2. 2 Whip the egg white to a froth and mix it into the sugar until the mixture is stiff like working paste.
3. 3 Sift a little sugar onto baking paper. Drop spoonfuls of the mixture onto the paper.
4. 4 Bake in a very slow oven (300°F) until set.
