Lemon Mousse
Ingredients
- 5 egg yolks
- 4 tablespoons sugar
- grated rind of 1 lemon
- juice of 1½ lemons
- 1 teaspoon gelatin
- 1 teaspoon water
- 5 egg whites
Method
- 1 Cream together the egg yolks and sugar.
- 2 Stir in the lemon rind and lemon juice.
- 3 Dissolve the gelatin in a little water, then stir into the mixture while hot.
- 4 Let stand until the mixture thickens.
- 5 Fold in the beaten egg whites.
- 6 Serve in individual sherbet cups.
