Lemon Mousse

Ingredients

  • 5 egg yolks
  • 4 tablespoons sugar
  • grated rind of 1 lemon
  • juice of 1½ lemons
  • 1 teaspoon gelatin
  • 1 teaspoon water
  • 5 egg whites

Method

  1. 1 Cream together the egg yolks and sugar.
  2. 2 Stir in the lemon rind and lemon juice.
  3. 3 Dissolve the gelatin in a little water, then stir into the mixture while hot.
  4. 4 Let stand until the mixture thickens.
  5. 5 Fold in the beaten egg whites.
  6. 6 Serve in individual sherbet cups.
