Lemon Meringue Sandwich Cookies
Ingredients
- 8 egg whites
- 1 lb powdered sugar
- 1 lemon (for zest)
Method
- 1 Beat egg whites until stiff peaks form.
- 2 Gradually beat in powdered sugar and lemon zest until well combined.
- 3 Drop mixture in small heaps onto parchment paper and smooth with a spoon.
- 4 Bake at 350°F until pale brown.
- 5 Carefully remove from paper and sandwich two cookies together.
