  • 8 egg whites
  • 1 lb powdered sugar
  • 1 lemon (for zest)

Method

  1. 1 Beat egg whites until stiff peaks form.
  2. 2 Gradually beat in powdered sugar and lemon zest until well combined.
  3. 3 Drop mixture in small heaps onto parchment paper and smooth with a spoon.
  4. 4 Bake at 350°F until pale brown.
  5. 5 Carefully remove from paper and sandwich two cookies together.
