Lemon Layer Cake With Lemon Frosting

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 3 egg yolks
  • 1 cup milk
  • 2 tsp baking powder
  • 3 cups all-purpose flour
  • 3 egg whites
  • 1 lemon, grated zest
  • 2 lemons, juiced
  • 3/4 cup sugar
  • 2 egg whites

Method

  1. 1 Preheat oven to 400°F. Cream butter and 1 1/2 cups sugar until light. Beat in egg yolks and milk.
  2. 2 Sift baking powder with flour. Add to batter alternately with beaten egg whites, ending with flour. Divide into three greased tins.
  3. 3 Bake at 400°F for 12-15 minutes until golden. Cool completely.
  4. 4 For frosting, boil lemon zest, juice, and 3/4 cup sugar for 1 minute. Slowly whisk into 2 beaten egg whites. Cook until thick.
  5. 5 Spread frosting between layers. Serve or store for up to six days.
