Lemon Layer Cake With Lemon Frosting
Ingredients
- 1/2 cup butter, softened
- 1 1/2 cups sugar
- 3 egg yolks
- 1 cup milk
- 2 tsp baking powder
- 3 cups all-purpose flour
- 3 egg whites
- 1 lemon, grated zest
- 2 lemons, juiced
- 3/4 cup sugar
- 2 egg whites
Method
- 1 Preheat oven to 400°F. Cream butter and 1 1/2 cups sugar until light. Beat in egg yolks and milk.
- 2 Sift baking powder with flour. Add to batter alternately with beaten egg whites, ending with flour. Divide into three greased tins.
- 3 Bake at 400°F for 12-15 minutes until golden. Cool completely.
- 4 For frosting, boil lemon zest, juice, and 3/4 cup sugar for 1 minute. Slowly whisk into 2 beaten egg whites. Cook until thick.
- 5 Spread frosting between layers. Serve or store for up to six days.
