Lemon Jelly Roll Cake

Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons melted Crisco
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons milk
  • 1 teaspoon lemon extract
  • Jelly or preserves, for filling

Method

  1. 1 Beat eggs and sugar together for 20 minutes until thick and pale.
  2. 2 Sift in flour, salt, and baking powder. Stir in milk, lemon extract, and melted Crisco.
  3. 3 Grease and flour a large flat baking tin. Pour in batter and spread evenly.
  4. 4 Bake in a moderately hot oven (375°F) for 12 minutes.
  5. 5 Turn out onto sugared paper, spread quickly with jelly, and roll up immediately.
