Lemon Jelly Roll Cake
Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 2 tablespoons melted Crisco
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons milk
- 1 teaspoon lemon extract
- Jelly or preserves, for filling
Method
- 1 Beat eggs and sugar together for 20 minutes until thick and pale.
- 2 Sift in flour, salt, and baking powder. Stir in milk, lemon extract, and melted Crisco.
- 3 Grease and flour a large flat baking tin. Pour in batter and spread evenly.
- 4 Bake in a moderately hot oven (375°F) for 12 minutes.
- 5 Turn out onto sugared paper, spread quickly with jelly, and roll up immediately.
