Lemon Italian Meringue Frosting
Ingredients
- 2-3 egg whites
- 2-3 tbsp sugar
- 1-2 tbsp water
- 1 tsp lemon juice or kirsch
- Optional: 1 tsp currant jelly, grated orange peel, or shredded candied peel
Method
- 1 Whip egg whites to stiff peaks.
- 2 Cook sugar and water to soft-ball stage (238°F).
- 3 Slowly pour hot syrup into whites while beating constantly.
- 4 Beat over moderate heat for one minute.
- 5 Remove from heat, add lemon juice or flavorings, and serve immediately.
