Lemon Italian Meringue Frosting

Ingredients

  • 2-3 egg whites
  • 2-3 tbsp sugar
  • 1-2 tbsp water
  • 1 tsp lemon juice or kirsch
  • Optional: 1 tsp currant jelly, grated orange peel, or shredded candied peel

Method

  1. 1 Whip egg whites to stiff peaks.
  2. 2 Cook sugar and water to soft-ball stage (238°F).
  3. 3 Slowly pour hot syrup into whites while beating constantly.
  4. 4 Beat over moderate heat for one minute.
  5. 5 Remove from heat, add lemon juice or flavorings, and serve immediately.
