Lemon Infused Olive Oil Mayonnaise

Ingredients

• 1 egg yolk
• 1 cup olive oil
• 1 tsp vinegar
• 1 tsp lemon juice

Method

1. 1 Place the egg yolk in a bowl.
2. 2 Add vinegar and lemon juice to the yolk.
3. 3 Slowly drizzle in the olive oil while beating constantly until the mixture is light and thick.
