Lemon Herb Onion Shells With Vermicelli
Ingredients
- 6 large Spanish onions
- 1 ounce cooked vermicelli
- ½ ounce bread crumbs
- ½ ounce butter, melted
- 1 egg
- 1 teaspoon cream or milk
- 1 teaspoon chopped parsley
- 1 teaspoon salt
- ½ teaspoon grated lemon rind
- ½ teaspoon mixed herbs
- ½ teaspoon pepper
- 1 ounce butter for baking
Method
- 1 Boil onions in salted water for 30 minutes. Drain, remove skins, and scoop out centers.
- 2 Finely chop the onion centers and mix with vermicelli, bread crumbs, melted butter, egg, cream, parsley, salt, lemon rind, herbs, and pepper.
- 3 Fill the onion shells with the mixture and place in a baking dish with 1 ounce of butter.
- 4 Cover and bake for 3 hours, basting occasionally.
- 5 Serve with the pan gravy.
