Lemon Herb Onion Shells With Vermicelli

Ingredients

  • 6 large Spanish onions
  • 1 ounce cooked vermicelli
  • ½ ounce bread crumbs
  • ½ ounce butter, melted
  • 1 egg
  • 1 teaspoon cream or milk
  • 1 teaspoon chopped parsley
  • 1 teaspoon salt
  • ½ teaspoon grated lemon rind
  • ½ teaspoon mixed herbs
  • ½ teaspoon pepper
  • 1 ounce butter for baking

Method

  1. 1 Boil onions in salted water for 30 minutes. Drain, remove skins, and scoop out centers.
  2. 2 Finely chop the onion centers and mix with vermicelli, bread crumbs, melted butter, egg, cream, parsley, salt, lemon rind, herbs, and pepper.
  3. 3 Fill the onion shells with the mixture and place in a baking dish with 1 ounce of butter.
  4. 4 Cover and bake for 3 hours, basting occasionally.
  5. 5 Serve with the pan gravy.
