Lemon Herb Brown Rice Salad

Ingredients

  • 1 1/2 cups brown rice, uncooked
  • 3 cups water
  • 2 lemons, juiced
  • 3 green onions, chopped
  • 1/4 cup parsley, minced
  • 1/2 teaspoon salt
  • 1 dash black pepper
  • 1/4 cup olive oil
  • 1 1/2 cups mixed vegetables, cut into small pieces

Method

  1. 1 Wash rice and combine with water in a pot. Bring to a boil, then reduce heat to low. Simmer uncovered until water is absorbed, about 45 minutes.
  2. 2 Transfer rice to a medium bowl and allow to cool completely.
  3. 3 Pour lemon juice over the rice and stir. Once lukewarm, add vegetables, salt, pepper, and olive oil.
  4. 4 Toss to combine. Chill for at least 1 hour before serving, or serve warm.
