Lemon Herb Brown Rice Salad
Ingredients
- 1 1/2 cups brown rice, uncooked
- 3 cups water
- 2 lemons, juiced
- 3 green onions, chopped
- 1/4 cup parsley, minced
- 1/2 teaspoon salt
- 1 dash black pepper
- 1/4 cup olive oil
- 1 1/2 cups mixed vegetables, cut into small pieces
Method
- 1 Wash rice and combine with water in a pot. Bring to a boil, then reduce heat to low. Simmer uncovered until water is absorbed, about 45 minutes.
- 2 Transfer rice to a medium bowl and allow to cool completely.
- 3 Pour lemon juice over the rice and stir. Once lukewarm, add vegetables, salt, pepper, and olive oil.
- 4 Toss to combine. Chill for at least 1 hour before serving, or serve warm.
