Lemon Ground Rice Cake
Ingredients
- 8 oz ground rice
- 6 oz castor sugar
- 4 eggs
- Grated rind of 1 lemon
Method
- 1 Beat the eggs well with a whisk.
- 2 Gradually mix in the castor sugar and ground rice, then add the lemon rind.
- 3 Pour into a well-greased baking tin and bake in a quick oven (425°F) for about one hour.
