  • 8 oz ground rice
  • 6 oz castor sugar
  • 4 eggs
  • Grated rind of 1 lemon

Method

  1. 1 Beat the eggs well with a whisk.
  2. 2 Gradually mix in the castor sugar and ground rice, then add the lemon rind.
  3. 3 Pour into a well-greased baking tin and bake in a quick oven (425°F) for about one hour.
