Lemon Garlic Sautéed Asparagus

Ingredients

  • 2 cups asparagus, washed and trimmed
  • 2 tablespoons margarine or butter
  • 2 teaspoons grated lemon peel
  • 1 large garlic clove, minced
  • 2 tablespoons fresh lemon juice
  • parsley, for garnish

Method

  1. 1 Cook asparagus in boiling water until tender, about 4 minutes. Drain and rinse with cold water to cool quickly, then drain again.
  2. 2 Pat asparagus dry, wrap in a paper towel and plastic wrap, and refrigerate until ready to use.
  3. 3 Melt margarine in a large skillet over medium-high heat. Add lemon peel and garlic, stirring for 30 seconds.
  4. 4 Add asparagus and toss to coat. Sprinkle with lemon juice and sauté until heated through and coated, about 3 minutes.
  5. 5 Transfer to a platter, sprinkle with parsley, and serve immediately.
