Lemon Garlic Roasted Potatoes
Ingredients
- 3 medium potatoes
- 1 lemon, juiced (about 1/4 cup lemon juice)
- 2 cloves garlic, minced
- 2 tablespoons oil (olive, canola, or vegetable)
Method
- 1 Heat the oven to 375°F.
- 2 In a small bowl, combine the lemon juice, minced garlic, and oil.
- 3 Peel the potatoes and cut them into 1-inch pieces.
- 4 Pour half of the oil mixture into a casserole dish or small baking pan to coat the bottom.
- 5 Place the potatoes in the pan and toss to coat with the mixture.
- 6 Bake for about 30 minutes, or until the potatoes are tender.
- 7 Remove from the oven and brush the remaining oil and lemon juice mixture over the hot potatoes. Serve warm.
