Lemon Garlic Roasted Potatoes

Ingredients

  • 3 medium potatoes
  • 1 lemon, juiced (about 1/4 cup lemon juice)
  • 2 cloves garlic, minced
  • 2 tablespoons oil (olive, canola, or vegetable)

Method

  1. 1 Heat the oven to 375°F.
  2. 2 In a small bowl, combine the lemon juice, minced garlic, and oil.
  3. 3 Peel the potatoes and cut them into 1-inch pieces.
  4. 4 Pour half of the oil mixture into a casserole dish or small baking pan to coat the bottom.
  5. 5 Place the potatoes in the pan and toss to coat with the mixture.
  6. 6 Bake for about 30 minutes, or until the potatoes are tender.
  7. 7 Remove from the oven and brush the remaining oil and lemon juice mixture over the hot potatoes. Serve warm.
