Lemon Fruit Cake With Candied Peel

Ingredients

  • 10 oz all-purpose flour
  • 8 oz unsalted butter
  • 8 oz granulated sugar
  • 2 oz candied peel
  • ½ lb sultanas (golden raisins)
  • 4 large eggs
  • Grated rind of 1 lemon

Method

  1. 1 Preheat oven to 350°F. Grease a cake tin and line with buttered paper.
  2. 2 Sift the flour and sugar together into a bowl.
  3. 3 Beat the butter until creamy. Add a little flour-sugar mixture, then one beaten egg. Repeat, alternating ingredients, until well blended.
  4. 4 Fold in the candied peel, sultanas, and lemon rind.
  5. 5 Pour into the prepared tin and bake for about two hours.
