Lemon Fruit Cake With Candied Peel
Ingredients
- 10 oz all-purpose flour
- 8 oz unsalted butter
- 8 oz granulated sugar
- 2 oz candied peel
- ½ lb sultanas (golden raisins)
- 4 large eggs
- Grated rind of 1 lemon
Method
- 1 Preheat oven to 350°F. Grease a cake tin and line with buttered paper.
- 2 Sift the flour and sugar together into a bowl.
- 3 Beat the butter until creamy. Add a little flour-sugar mixture, then one beaten egg. Repeat, alternating ingredients, until well blended.
- 4 Fold in the candied peel, sultanas, and lemon rind.
- 5 Pour into the prepared tin and bake for about two hours.
