Lemon Fried Doughnuts
Ingredients
- 1/2 lb sugar
- 3 oz butter
- 4 eggs
- 1 pint milk
- 1 tsp lemon extract
- 2 lb flour
- 1 oz baking powder
Method
- 1 Cream the butter and sugar together until light and fluffy.
- 2 Beat in the eggs one at a time, then mix in the lemon extract.
- 3 Combine the flour and baking powder, then alternate adding them with the milk to the batter.
- 4 Heat oil in a deep fryer or heavy pot to 375°F.
- 5 Drop spoonfuls of batter into the hot oil and fry until golden brown on all sides.
- 6 Remove with a slotted spoon and drain on paper towels.
