Lemon Fried Doughnuts

Ingredients

  • 1/2 lb sugar
  • 3 oz butter
  • 4 eggs
  • 1 pint milk
  • 1 tsp lemon extract
  • 2 lb flour
  • 1 oz baking powder

Method

  1. 1 Cream the butter and sugar together until light and fluffy.
  2. 2 Beat in the eggs one at a time, then mix in the lemon extract.
  3. 3 Combine the flour and baking powder, then alternate adding them with the milk to the batter.
  4. 4 Heat oil in a deep fryer or heavy pot to 375°F.
  5. 5 Drop spoonfuls of batter into the hot oil and fry until golden brown on all sides.
  6. 6 Remove with a slotted spoon and drain on paper towels.
