Lemon Frangipane Patties With Orange Sauce

Ingredients

  • 1/4 cup milk
  • 1/4 lb powdered sugar
  • 3 egg whites
  • 1 lemon, grated peel and juiced
  • 1/8 tsp salt
  • 1/2 lb flour
  • Jam, for filling
  • 1/2 cup white wine
  • 1 cup orange marmalade
  • Cornstarch, for thickening

Method

  1. 1 Whisk powdered sugar and egg whites. Beat in milk, lemon peel, and salt.
  2. 2 Stir in flour until combined. Spoon batter into patty tins.
  3. 3 Bake until done. Scoop out a small piece from the top of each patty to create a well.
  4. 4 Fill each patty with jam.
  5. 5 Simmer wine, orange marmalade, and lemon juice in a saucepan. Thicken with cornstarch.
  6. 6 Pour the warm orange sauce over the filled patties and serve.
