Lemon Extract Enriched Yeast Bread

Ingredients

  • 1 cup milk
  • 1 1/2 yeast cakes
  • 1/2 cup sugar
  • 2/3 cup butter
  • 4 1/2 cups flour
  • 3 egg yolks
  • 3 whole eggs
  • 1/2 tsp lemon extract

Method

  1. 1 Scald milk, cool to lukewarm, and dissolve yeast cakes.
  2. 2 Add sugar, softened butter, and half the flour. Beat in egg yolks.
  3. 3 Beat in whole eggs one at a time, then add remaining flour and lemon extract. Knead until consistent.
  4. 4 Allow dough to rise for 6 hours, punch down, and refrigerate overnight.
  5. 5 Shape dough as desired (see variations below) and bake in a moderate oven (350°F) until golden.
