Lemon Extract Enriched Yeast Bread
Ingredients
- 1 cup milk
- 1 1/2 yeast cakes
- 1/2 cup sugar
- 2/3 cup butter
- 4 1/2 cups flour
- 3 egg yolks
- 3 whole eggs
- 1/2 tsp lemon extract
Method
- 1 Scald milk, cool to lukewarm, and dissolve yeast cakes.
- 2 Add sugar, softened butter, and half the flour. Beat in egg yolks.
- 3 Beat in whole eggs one at a time, then add remaining flour and lemon extract. Knead until consistent.
- 4 Allow dough to rise for 6 hours, punch down, and refrigerate overnight.
- 5 Shape dough as desired (see variations below) and bake in a moderate oven (350°F) until golden.
