Lemon Extract Butter Cake
Ingredients
- 1¾ cups flour
- 2½ tsp baking powder
- ½ tsp salt
- ¼ cup butter
- ¾ cup sugar
- 1 egg
- ½ tsp lemon extract
- 2/3 cup milk
Method
- 1 Mix flour, baking powder, and salt; sift twice.
- 2 Cream butter until soft; add sugar gradually, beating until light.
- 3 Beat in egg and lemon extract.
- 4 Add flour mixture alternately with milk, beating smooth after each addition.
- 5 Turn into a buttered 8x8x2 inch square tin.
- 6 Bake in a 350°F oven for about 40 minutes. Serve with sauce or fruit.
