Lemon Extract Butter Cake

Ingredients

  • 1¾ cups flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • ¼ cup butter
  • ¾ cup sugar
  • 1 egg
  • ½ tsp lemon extract
  • 2/3 cup milk

Method

  1. 1 Mix flour, baking powder, and salt; sift twice.
  2. 2 Cream butter until soft; add sugar gradually, beating until light.
  3. 3 Beat in egg and lemon extract.
  4. 4 Add flour mixture alternately with milk, beating smooth after each addition.
  5. 5 Turn into a buttered 8x8x2 inch square tin.
  6. 6 Bake in a 350°F oven for about 40 minutes. Serve with sauce or fruit.
