Ingredients

  • 1 lb flour
  • 6 oz butter
  • 1/4 lb sugar
  • 1 egg
  • 1/4 pint milk
  • 15 drops lemon extract

Method

  1. 1 Warm the butter without oiling it, then beat it with a wooden spoon.
  2. 2 Stir in the flour and sugar gradually, mixing the ingredients well together.
  3. 3 Beat the egg and lemon extract into lukewarm milk, then stir this mixture into the flour.
  4. 4 Beat the dough vigorously for 10 minutes.
  5. 5 Divide into 24 pieces, place in patty pans, and bake in a brisk oven (400°F) for 20-30 minutes.
