Lemon Custard Tart

Ingredients

  • rind of 6 fresh lemons, grated
  • juice of 3 fresh lemons, strained
  • 16 egg yolks
  • 16 tablespoons powdered sugar
  • 4 crackers, finely powdered
  • 1 sheet puff pastry

Method

  1. 1 Grate the rind of 6 lemons and squeeze the juice from 3, then strain the juice.
  2. 2 Beat the 16 egg yolks until very light.
  3. 3 Mix in 16 tablespoons of powdered sugar and 4 finely powdered crackers. Beat until light.
  4. 4 Place puff pastry in a dish, pour in the mixture, and bake in a moderate oven (350°F) until set.
