Lemon Custard Tart
Ingredients
- rind of 6 fresh lemons, grated
- juice of 3 fresh lemons, strained
- 16 egg yolks
- 16 tablespoons powdered sugar
- 4 crackers, finely powdered
- 1 sheet puff pastry
Method
- 1 Grate the rind of 6 lemons and squeeze the juice from 3, then strain the juice.
- 2 Beat the 16 egg yolks until very light.
- 3 Mix in 16 tablespoons of powdered sugar and 4 finely powdered crackers. Beat until light.
- 4 Place puff pastry in a dish, pour in the mixture, and bake in a moderate oven (350°F) until set.
