Lemon Custard Swiss Roll Trifle
Ingredients
- 1 pint milk
- 2 tsp Allinson cornflour
- 2 oz sugar
- juice of 2 lemons
- 1 Swiss roll, sliced
- glacé cherries for garnish
Method
- 1 Make custard: whisk cornflour and sugar into milk. Boil for 1-2 minutes, then set aside to cool.
- 2 Stain lemon juice into the cooled custard and beat until perfectly smooth.
- 3 Line a glass dish with Swiss roll slices. Pour the lemon custard over the slices to cover completely.
- 4 Chill in a cold place for 2-3 hours. Garnish with glacé cherries before serving.
