Lemon Custard Swiss Roll Trifle

Ingredients

  • 1 pint milk
  • 2 tsp Allinson cornflour
  • 2 oz sugar
  • juice of 2 lemons
  • 1 Swiss roll, sliced
  • glacé cherries for garnish

Method

  1. 1 Make custard: whisk cornflour and sugar into milk. Boil for 1-2 minutes, then set aside to cool.
  2. 2 Stain lemon juice into the cooled custard and beat until perfectly smooth.
  3. 3 Line a glass dish with Swiss roll slices. Pour the lemon custard over the slices to cover completely.
  4. 4 Chill in a cold place for 2-3 hours. Garnish with glacé cherries before serving.
