Lemon Custard Pie
Ingredients
- 2 tablespoons flour
- ½ cup sugar
- 2 eggs, separated
- 1 lemon
- 1½ cups milk
- 1 pie shell
Method
- 1 Mix flour, sugar, and a pinch of salt in a bowl.
- 2 Beat egg yolks, then stir in lemon juice and grated rind.
- 3 Add the flour mixture to the yolks, beating until combined.
- 4 Stir in milk, then fold in stiffly beaten egg whites.
- 5 Pour into an unbaked pie shell.
- 6 Bake at 425°F for 15 minutes, then reduce to 350°F and bake 15 minutes more.
