Lemon Custard Pie

Ingredients

  • 2 tablespoons flour
  • ½ cup sugar
  • 2 eggs, separated
  • 1 lemon
  • 1½ cups milk
  • 1 pie shell

Method

  1. 1 Mix flour, sugar, and a pinch of salt in a bowl.
  2. 2 Beat egg yolks, then stir in lemon juice and grated rind.
  3. 3 Add the flour mixture to the yolks, beating until combined.
  4. 4 Stir in milk, then fold in stiffly beaten egg whites.
  5. 5 Pour into an unbaked pie shell.
  6. 6 Bake at 425°F for 15 minutes, then reduce to 350°F and bake 15 minutes more.
