  • 6 oz granulated sugar
  • ½ lb currants
  • 2 oz candied peel
  • 1 tsp baking powder
  • 2 eggs
  • Grated rind of 1 lemon

Method

  1. 1 Rub the butter into the flour until the mixture resembles coarse crumbs.
  2. 2 Add the sugar, currants, candied peel, baking powder, and lemon rind.
  3. 3 Mix very stiffly with the well-beaten eggs to form a stiff dough.
  4. 4 Place the dough in rough heaps onto a well-greased baking sheet.
  5. 5 Bake in a 400°F oven for 15 minutes until golden brown.
