Lemon Currant Rock Cakes
Ingredients
- 1 lb flour
- 6 oz butter
- 6 oz granulated sugar
- ½ lb currants
- 2 oz candied peel
- 1 tsp baking powder
- 2 eggs
- Grated rind of 1 lemon
Method
- 1 Rub the butter into the flour until the mixture resembles coarse crumbs.
- 2 Add the sugar, currants, candied peel, baking powder, and lemon rind.
- 3 Mix very stiffly with the well-beaten eggs to form a stiff dough.
- 4 Place the dough in rough heaps onto a well-greased baking sheet.
- 5 Bake in a 400°F oven for 15 minutes until golden brown.
