Lemon Currant Pound Cake

Ingredients

  • 250 g butter
  • 250 g sugar
  • 12 egg yolks
  • 12 egg whites
  • 400 g flour
  • 150 g currants
  • Zest of 1 lemon
  • 1 heaping tsp baking powder

Method

  1. 1 Beat butter and sugar until very fluffy. Gradually add egg yolks.
  2. 2 Whip egg whites into stiff peaks. Fold into the butter mixture.
  3. 3 Sift flour, currants, lemon zest, and baking powder together. Fold into the batter.
  4. 4 Pour into a loaf pan. Bake at 350°F for 1 to 1¼ hours.
