Lemon Currant Pound Cake
Ingredients
- 250 g butter
- 250 g sugar
- 12 egg yolks
- 12 egg whites
- 400 g flour
- 150 g currants
- Zest of 1 lemon
- 1 heaping tsp baking powder
Method
- 1 Beat butter and sugar until very fluffy. Gradually add egg yolks.
- 2 Whip egg whites into stiff peaks. Fold into the butter mixture.
- 3 Sift flour, currants, lemon zest, and baking powder together. Fold into the batter.
- 4 Pour into a loaf pan. Bake at 350°F for 1 to 1¼ hours.
