Lemon Currant Muffins
Ingredients
- 1 cup flour
- 4 tablespoons sugar
- 2 tablespoons butter
- 1/2 teaspoon baking powder
- 1/2 teaspoon lemon extract
- 2 eggs
- 1/4 cup currants
Method
- 1 Beat eggs and sugar together until combined.
- 2 Add melted butter, flour, baking powder, and lemon extract; mix well.
- 3 Sprinkle a few currants into the bottom of small muffin tins or molds.
- 4 Divide batter among molds and bake for 15 minutes.
