Lemon Currant Cake
Ingredients
- 10 oz flour
- ½ lb currants
- ½ lb sugar
- 3 oz butter
- 1 egg
- 2 tsp baking powder
- ½ pint milk
- grated lemon rind
Method
- 1 Rub the butter into the flour until it resembles fine bread crumbs.
- 2 Add the sugar, well washed and dried currants, baking powder, and grated lemon rind.
- 3 Mix in the beaten egg and milk to form a batter.
- 4 Pour into a greased cake tin lined with paper and bake for 1 hour and 30 minutes.
