Lemon Currant Cake

Ingredients

  • 10 oz flour
  • ½ lb currants
  • ½ lb sugar
  • 3 oz butter
  • 1 egg
  • 2 tsp baking powder
  • ½ pint milk
  • grated lemon rind

Method

  1. 1 Rub the butter into the flour until it resembles fine bread crumbs.
  2. 2 Add the sugar, well washed and dried currants, baking powder, and grated lemon rind.
  3. 3 Mix in the beaten egg and milk to form a batter.
  4. 4 Pour into a greased cake tin lined with paper and bake for 1 hour and 30 minutes.
