Lemon Curd Pie Filling

Ingredients

  • 1 1/2 cups corn syrup
  • 1 1/2 cups water
  • 1/3 cup cornstarch
  • 2 eggs
  • 1 tablespoon lemon rind
  • 1/2 cup lemon juice (from 2 lemons)
  • 1/8 teaspoon salt

Method

  1. 1 Mix cornstarch with 1 cup of water until smooth.
  2. 2 Add the cornstarch mixture to the corn syrup in a saucepan.
  3. 3 Cook over direct flame, stirring constantly, until the mixture thickens.
  4. 4 Place the saucepan over hot water and cook for 20 minutes.
  5. 5 Whisk together the remaining ingredients: eggs, lemon rind, lemon juice, salt, and 1/2 cup water.
  6. 6 Stir the egg mixture into the thickened corn syrup base and cook for 5 minutes. Use hot or cold.
