Lemon Curd Pie Filling
Ingredients
- 1 1/2 cups corn syrup
- 1 1/2 cups water
- 1/3 cup cornstarch
- 2 eggs
- 1 tablespoon lemon rind
- 1/2 cup lemon juice (from 2 lemons)
- 1/8 teaspoon salt
Method
- 1 Mix cornstarch with 1 cup of water until smooth.
- 2 Add the cornstarch mixture to the corn syrup in a saucepan.
- 3 Cook over direct flame, stirring constantly, until the mixture thickens.
- 4 Place the saucepan over hot water and cook for 20 minutes.
- 5 Whisk together the remaining ingredients: eggs, lemon rind, lemon juice, salt, and 1/2 cup water.
- 6 Stir the egg mixture into the thickened corn syrup base and cook for 5 minutes. Use hot or cold.
