Lemon Curd Fruit Salad Dressing

Ingredients

  • 1 cup sugar
  • ½ cup water
  • 3 egg yolks, beaten
  • 2 lemons, juiced
  • ½ cup wine (optional)

Method

  1. 1 Boil sugar and water for 5 minutes.
  2. 2 Pour hot syrup into beaten egg yolks.
  3. 3 Cook over hot water, stirring constantly, until slightly thickened.
  4. 4 Cool and stir in lemon juice (or wine plus 1 tbsp lemon juice).
