Lemon Cream Whip With Apple Jelly

Ingredients

  • 1 pint heavy cream
  • Zest of 1 lemon
  • Loaf sugar (to taste)
  • 3 large egg whites
  • Apple jelly, seasoned with lemon

Method

  1. 1 Grate lemon zest into the heavy cream and sweeten with sugar to taste.
  2. 2 Whip the cream mixture well until it begins to thicken.
  3. 3 Beat the egg whites until stiff peaks form, then gently fold them into the cream.
  4. 4 Place a layer of lemon-seasoned apple jelly in the bottom of serving glasses.
  5. 5 Spoon or pipe the whipped cream mixture on top of the jelly as it rises.
