Lemon Cream Pie With Meringue
Ingredients
- 1 pie crust (baked)
- 1 cup sugar
- 2/3 cup water
- 1 tsp flour
- 2 egg yolks
- 1 lemon (grated rind and juice)
Method
- 1 Line a pie tin with pastry and bake until golden.
- 2 Combine sugar and water in a saucepan over heat.
- 3 Beat flour and egg yolks together, then whisk into the syrup.
- 4 Add lemon rind and juice; cook, stirring constantly, until thick and smooth.
- 5 Pour filling into the baked crust and bake at 350°F for 5 minutes.
- 6 Top with meringue and bake until puffed and brown.
