Lemon Cream Pie With Meringue

  • 1 pie crust (baked)
  • 1 cup sugar
  • 2/3 cup water
  • 1 tsp flour
  • 2 egg yolks
  • 1 lemon (grated rind and juice)

Method

  1. 1 Line a pie tin with pastry and bake until golden.
  2. 2 Combine sugar and water in a saucepan over heat.
  3. 3 Beat flour and egg yolks together, then whisk into the syrup.
  4. 4 Add lemon rind and juice; cook, stirring constantly, until thick and smooth.
  5. 5 Pour filling into the baked crust and bake at 350°F for 5 minutes.
  6. 6 Top with meringue and bake until puffed and brown.
