Lemon Cream Layer Cake

Ingredients

  • 3 eggs
  • 1 ½ cups powdered sugar
  • 1 tablespoon lemon juice
  • ½ cup cold water
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 ½ cups milk
  • 1 tablespoon flour
  • 2/3 cup sugar
  • 2 eggs
  • pinch of salt
  • frosting of choice

Method

  1. 1 Beat 3 eggs with 1 ½ cups powdered sugar, 1 tablespoon lemon juice, and ½ cup cold water.
  2. 2 Sift in 2 cups flour and 2 teaspoons baking powder.
  3. 3 Bake in layer-cake tins.
  4. 4 Heat 1 ½ cups milk in a double boiler.
  5. 5 Beat 1 tablespoon flour, 2/3 cup sugar, 2 eggs, and a pinch of salt.
  6. 6 Gradually add egg mixture to boiling milk, stir, and cook for 15 minutes.
  7. 7 Flavor to taste and cool.
  8. 8 Assemble cake layers with filling and ice with preferred frosting.
