Lemon Cream Cheese
Ingredients
- 1 quart thick sweet cream
- juice of 3 lemons
- finely grated rind of 1 lemon
- sugar to taste
- preserved orange or marmalade for garnish
Method
- 1 Combine the cream, lemon juice, and grated lemon rind in a bowl. Sweeten to your taste.
- 2 Beat the mixture well until it thickens but before it separates into butter.
- 3 Line a sieve with fine muslin and pour the mixture into it. Let it drain overnight.
- 4 Turn the cheese out onto a plate and garnish with preserved orange or marmalade.
