Lemon Cream Cheese

Ingredients

  • 1 quart thick sweet cream
  • juice of 3 lemons
  • finely grated rind of 1 lemon
  • sugar to taste
  • preserved orange or marmalade for garnish

Method

  1. 1 Combine the cream, lemon juice, and grated lemon rind in a bowl. Sweeten to your taste.
  2. 2 Beat the mixture well until it thickens but before it separates into butter.
  3. 3 Line a sieve with fine muslin and pour the mixture into it. Let it drain overnight.
  4. 4 Turn the cheese out onto a plate and garnish with preserved orange or marmalade.
