Lemon Cornstarch Cake

Ingredients

  • 4 egg whites
  • 4 egg yolks
  • ¼ lb butter
  • ½ lb granulated sugar
  • 2 oz cornstarch
  • ¼ lb wheat flour
  • 1 tsp baking powder
  • grated rind of ½ lemon

Method

  1. 1 Beat the egg whites well, then beat the yolks separately before combining them.
  2. 2 Cream the butter, then gradually beat in the sugar until light.
  3. 3 Add the egg mixture to the butter and beat well.
  4. 4 Mix cornstarch, flour, and baking powder; sift and stir into the batter along with lemon rind.
  5. 5 Bake in greased gem pans in a moderate oven (350°F) for 15 minutes.
