Lemon Cornstarch Cake
Ingredients
- 4 egg whites
- 4 egg yolks
- ¼ lb butter
- ½ lb granulated sugar
- 2 oz cornstarch
- ¼ lb wheat flour
- 1 tsp baking powder
- grated rind of ½ lemon
Method
- 1 Beat the egg whites well, then beat the yolks separately before combining them.
- 2 Cream the butter, then gradually beat in the sugar until light.
- 3 Add the egg mixture to the butter and beat well.
- 4 Mix cornstarch, flour, and baking powder; sift and stir into the batter along with lemon rind.
- 5 Bake in greased gem pans in a moderate oven (350°F) for 15 minutes.
